Shropshire Blue

This Blue Shropshire cheese boasts a remarkable, nutty taste, intermingled with a hint of spice. Its pleasing flavor and smooth texture are complemented by its striking appearance. Originating in Scotland, Blue Shropshire was initially crafted to mimic Stilton cheese, with the distinctive addition of annatto to the milk, giving it a vibrant orange tint. This results in a soft, mellow blue cheese with a stunning array of colors. We produce this cheese similarly to our traditional Blue Stilton, employing vegetarian rennet, and it is matured for up to 12 weeks.
